Baked Cardamon Donuts that Will Have You Dreaming of Sweden

Donut forget…YOU are amazing! And, I think you bake the world a better place.

Okay, okay. I know, I’m a weird-doguh (I promise that’s probably the last one!).

It’s hard not to start a great recipe with a little baking pun or two.

My daughter and I recently worked together to create a new donut recipe using one of my favorite spices: cardamon. I loved getting creative with her in the kitchen – and talking through the process of developing a recipe. She was so funny and clever – we had a blast designing these donuts together. Obviously, for these Baked Cardamon Donuts, we decided sprinkles were a must!

Anyone who has traveled to Sweden knows how amazing cardamon is in almost anything, from coffee to baked goods. It’s an aromatic, warm, tastes-like-Christmas, and inviting flavor. Indeed, cardamon has a unique and distinctive flavor that is bold and delicious. And, I’m a sucker for it. So, when I found a cardamon extract at Ingebretsen’s Scandinavian Gifts & Foods (in Minneapolis), I knew I had to buy it and find a way to use it. This served as the inspiration for our Baked Cardamon Donuts!

And, DANG, these Baked Cardamon Donuts are so good! 

Why We Love Them + You Will Too

Moist and chock-full of cardamom flavor, they are perfect with a morning coffee or an afternoon tea. Even my daughter declared them a great success (though, admittedly, she prefers cinnamon). 

I recommend that you use a donut pan for these Baked Cardamon Donuts. While you can use a muffin tin as an alternative, they won’t be donuts – and the texture may change slightly.

Baked Cardamon Donuts

Baked cardamon donuts using cardamon extract and spice. Perfectly paired with a cup of coffee and dreams of visiting Sweden.

Equipment

  • 2 piping bags + large open tip
  • A donut pan (or two)
  • Food coloring (if you want to color the frosting)
  • And, of course, sprinkles!

Ingredients

Donuts

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom spice
  • 1 cup sour cream
  • 3/4 cup sugar
  • 2 large eggs
  • 2 tbsp butter melted
  • 2 tsp vanilla extract
  • 1 tsp cardamom extract

Frosting

  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1/4 tsp cardamom spice

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Lightly grease your donut pan – you may prefer using two standard donut pans (you can use a muffin tin, but then they won’t be donuts, and the texture may change).
  • In a large bowl, mix the flour, baking powder, spices, and salt until combined.
  • Then, in the bowl of a stand mixer, combine the melted butter, sugar + extracts. Mix until well combined and the texture is smooth.
  • Slowly, alternate adding the sour cream + flour mixture to the wet ingredients (starting + ending with flour) until just combined. Do not overmix, or the donuts will be tough + dry.
  • Using a piping bag, pipe the donut batter into the donut pan. Fill them about 2/3 full. Bake for 8-10 minutes. They are done when the toothpick comes out clean with a few crumbs. Let the donuts cool.
  • While the donuts are cooling, whisk together the powdered sugar, milk, vanilla extract, + cardamom spice until smooth. You can add food coloring, if desired.
  • The icing should be thick. You want it to nestle on top of the donuts, but not drip too much (but it shouldn’t paste thick, either).
  • Fill your second piping bag with the frosting and pipe over the top of the cooled donuts. Alternatively, you can dip and twist them out of a bowl filled with the frosting. Both techniques work, so it’s whichever one you prefer. Finally, top with your favorite sprinkles (or skip if you prefer)!
